
Crispy Vacherin Fribourgeois AOP Parcels

4 | Filo pastry sheets, thawed |
1 | Bunch fresh thyme |
400 g | Vacherin Fribourgeois AOP |
Olive oil |

Instructions
- Let the filo pastry melt. To avoid waste, you can also cut the filo roll in half and return the unused portion to the freezer.
- Cut the Vacherin into 24 equal-sized rectangular pieces (approx. 15 g each). Finely chop the thyme.
- Cut each filo sheet lengthwise into 8 cm wide strips then cut crosswise to make 24 pieces total. Keep the filo covered with plastic wrap and a damp cloth to prevent drying out.
- Place a piece of cheese and a pinch of thyme in the center of each filo piece. Roll up the parcel by folding in the sides over the cheese and rolling tightly to seal. Brush each parcel thoroughly with olive oil. Place seam-side down on a parchment-lined baking tray. Bake at 225°C on the middle rack for 8-10 minutes until golden and crisp. Allow to cool slightly, but serve as soon as possible for that deliciously melty center.
